Is it bad that I'm taking only one AP class my junior year?

You should be taking at least five academic classes each semester. Make sure that you have taken enough years of the same foreign language to meet the requirements of the universities that interest you. If your GPA is at least 3.5/4.0 and there is another AP class in which you think you can earn an A, you should change one of your honors classes to an AP class in the same subject if it is available. Universities do not expect students to take classes which are not available at their high schools.
